If you’ve got a spare two hours between now and Christmas (lucky you!) then you’ve got time to make mince pies completely from scratch. I’m not kidding.
Apple, Christmas, Cinnamon, Cranberry, Dried fruit, Limoncello, Nuts, Orange, Rum, Shortcrust, Spices, Sultanas
A bit sweet, a bit savoury. Terribly simple, but very delicious. Better baked, of course … but fine as is if you’re nowhere near an oven.
Inspired by an assortment of donated citrus, a sunny afternoon, and a hankering for something tart but delicate. Serve after dinner on a Sunday night, with good friends, a glass of sparkling wine and a few hours of uncontrollable laughter.
All fruit and no Copha.
Oats. Cranberries. Raisins. Dark-chocolate chips. Candied almonds. Coconut. Coffee grounds. Everything! (And all things that could pass as ‘breakfast’.)
This is The Pie. The recipe is quick, easy, forgiving and adaptable. The finished product tastes like magic. I love this pie. Everyone who eats this pie loves this pie.
